If someone told you a company based in an old mushroom farm in a UK South Devon village was making Hoisin sauce and exporting it to Hong Kong, you probably wouldn't believe them. But this is exactly what the Westcountry Spice Company is now doing, thanks to its status as the only producer of gluten-free organic Hoisin sauce in the world.  It took three months from scratch to get the taste right. Traditional Hoisin sauce is made with barley – used to ferment soy beans – but all Westcountry products are gluten-free, so using barley was out of the question.
