Granulated Yeast (Active dry yeast) is a type of yeast used to make dough rise for bread, rolls, and a few types of cake. Yeast is essentially tiny, living cells, and the specific yeast used in this product isSaccharomyces cerivisiae. It responds to sugar, converting it to carbon dioxide (CO2), and causes dough to rise.

For centuries, the most available form of yeast was fresh yeast. While this type works very well, it has a short shelf life. It can still be purchased in blocks or small cubes of wet yeast, but consumers are more likely to find active dry yeast available in the store. This form was first developed during World War II by the Fleischmann Company, and it can be kept alive in small packages for a year or two.

The process Fleishmann’s developed for making active dry yeast is still used today. The yeast isgranulated so that it forms tiny particles, dried, and vacuum-sealed. The emphasis in the name is on "active." While the yeast remains dormant in the package, it can be activated when it's used correctly to successfully produce a leavened bread or other product.
